Gluten-Free Coconut Ricotta Cheesecake | Step-By-Step Instructions

This coconut ricotta cake is a delicious gluten-free dessert that is fast and easy to make. It is creamy and not overly sweet, which is ideal for those who prefer a less-sweet dessert. Simply follow the recipe listed below to try this fantastic ricotta cheesecake yourself.

Equipment

  • electric hand mixer
  • 8-inch round cake or spring-form pan

Ingredients

  • 16 oz ricotta cheese, drained
  • 1/2 to 1 cup sugar of choice (Adjust sugar to your taste.)
  • 3 eggs
  • 1 tsp rum extract (or vanilla extract)
  • 1/3 cup tapioca starch (or cornstarch)
  • 1 tsp baking powder
  • pinch of salt
  • 1 cup unsweetened shredded coconut

Instructions

  • Drain 16 oz of ricotta cheese.
  • Preheat the oven to 350℉.
  • Prepare an 8-inch round pan by lining it with parchment paper or greasing it with butter or oil. Set aside.
  • In a large bowl, beat the drained ricotta and sugar until fluffy (1-2 minutes).
  • Add the eggs, one at a time, beating after each addition.
  • Add the cornstarch, baking powder, rum or vanilla extract, and salt and mix well.
  • Stir in the shredded coconut by hand and pour the batter into the prepared pan. Tap on the counter three or four times to eliminate air bubbles.
  • Bake for 40-45 minutes (or until slightly golden around the edges).
  • When done, allow the cake to cool in the pan for 15 minutes, then transfer to a serving dish to cool completely.
  • Garnish with more shredded and toasted coconut to serve.
